一起电炸炉火灾调查和模拟实验分析

摘要: 某地一厨房发生一起电炸炉引发的火灾,在调查过程中为还原和查找电炸炉起火的机理,通过测试油品闪点,对电炸炉进行干烧、感温装置失效、感温探头被油炸物覆盖等模拟实验,观察电炸炉内油品温度的变化,最终得出结论认为电炸炉在温控装置失效、油温感温探头被包裹等状态下,感温装置不能准确测定油温,无法起到控温效果,加热管持续加热可引起油品发生燃烧。进一步深入分析了电炸炉在油炸过程中发生火灾的机理,为火灾调查和火灾防控提供一些思路。

Abstract: In order to restore and find the mechanism of an electric fryer fire, in the process of investigation, through the flash point of oil test, electric fryer dry burning test, temperature sensing device failure test, temperature sensing probe covered test, observe the change of oil temperature in electric fryer. Finally, it is concluded that the oil temperature cannot be accurately measured by the temperature sensing device under the condition that the temperature control device fails or the oil temperature sensing probe is wrapped, and the oil can be burned by continuous heating of the heating tube. The mechanism of fire in electric fryer during frying is further analyzed, which provides some ideas for fire investigation and fire prevention and control.
